Observation

Thai basil has a fragrance all its own: sweet and peppery, with notes of anise, clove, and licorice. Its purple stems, pointed green leaves, and delicate flowering spikes make it as beautiful in the garden as it is useful in the kitchen.

Unlike many sweet basils, Thai basil holds its character remarkably well when heated. The fresh leaves can be added to stir-fries, curries, soups, noodle dishes, and fried rice, preferably near the end of cooking so their fragrance remains vivid. The edible flowers make a lovely garnish, and the leaves can also be steeped for a warm, aromatic tea.

Thai basil is especially wonderful when picked moments before it is used. A handful of fresh leaves can awaken an entire dish with sweetness, spice, and unmistakable perfume.
