Observation
Asparagus is one of the few widely grown perennial vegetables, returning each spring with tender edible shoots. We grow both purple and green varieties and spread additional crowns into new ground each year to gradually increase our yield.
After harvest, the remaining spears grow into tall, fern-like plants that gather energy for the crowns below, preparing the next season’s crop.
