Spring and Fall

We maintain a small number of shiitake logs, inoculated mostly on oak, one of the hardwoods they readily inhabit. Native to East Asia and cultivated there for centuries, shiitakes have a rich, savory flavor that deepens when dried.

Log-grown shiitakes are a valuable non-timber forest product, turning carefully harvested woodland wood into food without clearing the forest or treating timber as its only yield.
